alternative name for stinky tofu, the delightfully pungent national dish of taiwan. also enjoyed in other east asian cuisines, stankfu is the result of soaking regular tofu in a fermenting broth of rotting vegetables and possibly shrimp for up to six months. it is frequently fried and served with chili sauce.
