Sunté
a type of oyster cultivated in the pacific coast. they are small, sweet, almost nutty oysters characterized by their deep, almost bowl-shaped sh-ll. like other pacifics, they have deeply fluted, sharp, pointy sh-lls. they sp-wn later and in warmer water than other oysters, so they remain firm and sweet well into summer months. sunté are widely cultivated in j-pan and the west coast. the name sunté is so valued that sunté are always labeled as such, although some places will also specify where they are from.
i like to eat sunté oysters and beluga caviar in my bentley.
