lake trout
the term used in baltimore for fried breaded white fish, typically served in a sandwich. despite its name, most “lake trout” is actually atlantic whiting, which is neither trout nor from a lake. it is typically served with a number of condiments, such as ketchup and horseradish. lake trout is an everyday food, and often served in aluminum foil in a paper bag at small take-out establishments.
